Mushroom Bake (Hot or cold)

Ingredients

I large Onion
8 ozs of Mushrooms
3 ozs of grated cheddar cheese
4ozs of breadcrumbs
1 large egg
1 good sized teaspoon vegemite
mixed herbs (dried) or a handful of fresh sage/thyme/rosemary.

Method

Peel and cut up the onion into thin and small pieces. Braise it in butter until soft but not browned.

When the onion is nice and soft add the mushrooms and a bit extra butter if needed until the mushrooms are soft. Cook them under a low heat for 20 minutes. Do not let them go dry and brown.

Take off the heat and add the vegemite. Let it melt through the mixture.

Whisk up the egg with a fork until well blended. Add it to the mushroom mixture.

Stir in the grated cheese then the breadcrumbs. Add the herbs.

This should now have a soft consistency but with a bit of structure.

Put in a greased dish of your choice.

Cook at 180c for 35 minutes.
