Banana and chocolate cake

Cooking time: Loaf – 60 minutes, 7 inch circular – 45 minutes, Cupcakes – 20 minutes

Ingredients

2 over ripe bananas (if you don’t have any then you can pop your bananas in the oven for 30 minutes at 60oC until they’re ready to use)
113g / 4oz caster sugar
113g / 4oz butter (you can use a spread instead)
113g / 40z self-raising flour
2 medium eggs
10 tsp Nutella or other chocolate spread

Method

Preheat the oven to 180oC / gas mark 4.

Add the sugar and butter to a large bowl and cream together until it is a smooth consistency. You can use an electric mixer to make this quicker and easier but my children love to use a wooden spoon and take it in turns!

Add the eggs and flour and blend until all of the ingredients become a smooth and silky cake mix.

Mash the ripe bananas in a separate bowl using the back of a fork until there are no big lumps and then gently fold the banana through the cake mixture.

Add the cake mix to your chosen cake tin and then add the chocolate spread in blobs. Spread the blobs out across the cake and swirl a knife or skewer through it to create a marbled effect.
If you are making cupcakes then add a teaspoon of chocolate on top of each cup of mixture; these will sink into the cake mix as it rises and creates a gooey chocolate centre!

Bake until golden brown

Allow to cool and enjoy!
