Bram brack cake

Serves: 8-10 People
Prep time: 15 mins (plus overnight soak of fruit previous to making)
Cooking time: 90 mins
Ingredients
12 oz- 125g of any dried fruit.
300ml of cold strong tea
1 medium egg
2 tablespoons of marmalade
1 teaspoon mixed spices
200 g/ 7 oz castor sugar
400g/ 14 oz self-raising flour sifted
Method
Soak all the dried fruit in the tea overnight.
Grease and line a baking tin with greaseproof paper. This works well in a loaf tin.
Preheat oven to 190c/Gas 5
Take soaked fruit and add all the other ingredients to a bowl and mix well.
Place in the centre of the oven and bake for up to 1.5 hours or until just beginning to shrink away from tin.
(**Depending on your oven it may cooker quicker than the above stated time**)
Leave in tin to firm up. Store for a few days before eating as it goes like a lovely malt loaf and will keep up to two weeks or can be frozen.
It is delicious with butter on it.
